Hello and welcome to Happy Valley Chow. My name is Eric Pepple and I'd like to take this time to give you an idea of who I am. I am a Hotel, Restaurant and Institutional Management major at the Pennsylvania State University. I also have a second degree in Music Performance in Jazz and Classical saxophone. I have a huge passion for both music and cooking, it's just a great combination! After I graduate with my HRIM degree, my main career goal is to open up my own restaurants....yes that is plural, restaurantS. I am currently in an amazing relationship with my beautiful fiance Lee. We got engaged on October 13th, 2012 and plan to get married on July 27th, 2013....she is my taste tester for all the food I post :)

I also come from a very large, loud and amazing Italian Family. We have always cooked way to much food for every occasion, which probably sparked my interest in food and cooking.

Some of you might not like this next little tid bit about me...but I have had an obsession, since birth, with the city of Pittsburgh and their sports teams. The Steelers, Penguins, and Pirates baby...City of Champions!

Ohh and I almost forgot! I am the head chef for THE BEST....I say again THE BEST tailgate! The Nittany Tailgating Association. We average probably about 100 guests per game, we have 5 car port tents (you know the big collapsible tents you can park cars under...yeah 5 of them), I have 2 - 5 Foot x 2 Foot party grills (300 Burgers at a time anybody??), we have 3 signature adult beverages (The Release Valve, WooWoo & Lionaide), and we have a 42" flat screen with DirecTV. This past football season we were voted the BEST OVERALL TAILGATE for the 2011/12 Penn State Football Season. Yes...we are quite legit :)

There isn't to much more to me, besides golfing whenever I can afford it and playing PS3 when I have time (PSN: pennstater0315).   1. Did you have a hand in either of the vegan dishes currently at Zola? Loved the Crispy Lotus Root garnish on the tofu.

    1. I didn't unfortunately. I was only working down there for a few months really trying to decide if I wanted to pursue my acceptance to Culinary Institute of America. Being friends with the owner, who was one of my references for the CIA, the gig was just to test the waters to see if I wanted to be a professional chef my whole life or not. I'm friends with the sous chef down there now, who most likely had a hand in those dishes. They certainly do a good job down there.
